Sipping on history: Ruang Khao Siam Sapphire takes over Amaris for a one-night-only experience

Some spirits tell a story. Others are the story. In the case of Ruang Khao Siam Sapphire, it’s firmly in the latter category. With two centuries of history, this Thai-aged rum carries the past into the present.

On Wednesday, February 26, Ruang Khao Siam Sapphire took over Amaris Cocktail and Wine Bar Bangkok for a guest shift event titled ‘A Timeless Night Inspired by a Timeless Thai Treasure.’ For one night only, guests were invited to explore its history and smooth, slightly sweet profile through a series of expertly crafted cocktails.

An introduction to Ruang Khao Siam Sapphire

If you know Thai liquor, you know Ruang Khao. It has been around since 1786, long enough to be considered a national staple. And Ruang Khao Siam Sapphire is one of the brand’s newest products

Made from Thailand’s sugarcane and aged in oak barrels, this rum delivers a natural sweetness, but not in an overpowering way—just enough to make it smooth. The barrel ageing brings out layers of caramel, vanilla, and a touch of spice. It can be enjoyed straight or as a base for cocktails.

The cocktails

During the guest shift event at Amaris Cocktail and Wine Bar, Ruang Khao Siam Sapphire was served in three different cocktails. First up was the Kington Negroni, which was a bold rework of the classic. Vermouth, Campari, Cherry Heering, and Angostura bitters gave it the familiar Negroni bitterness, but swapping out gin for aged rum brought in a deeper, caramel-like richness.

The next cocktail was Phrao. It went in the opposite direction, offering a light, refreshing, and floral taste. With a mix of chrysanthemum-bay leaf cordial, coconut water, and citric acid, it played up the rum’s natural sweetness but kept things bright and layered.

For something with a bit more punch, the Yum Som O leaned into Thai flavours. Pink grapefruit, lime juice, egg white, and pomelo gave it a tart, citrusy base, while a touch of chilli added a subtle heat that lingered on the finish.

In addition to these three cocktails, the menu featured Siam Sapphire Highballs, Siam Sapphire Coco, and Siam Sapphire Cola. These were simple and unfussy drinks that let the rum speak for itself.

The design

The event also invited guests to see the details behind Ruang Khao Siam Sapphire’s bottle design. The shape of the bottle is inspired by traditional Thai water jugs, and the deep sapphire colour pays tribute to Thailand’s famous gemstones.

Look closely, and you’ll see a map of Ancient Siam, originally drawn by French diplomat Simon de La Loubère during the reign of King Narai. It’s a nod to the past, wrapped in a design that feels decidedly modern. This design makes it the perfect gift and souvenir from Thailand.

Adding to the evening’s excitement were some of Thailand’s most creative minds. Yutthana Boonaom, a legend in the country’s music and concert industry, was in attendance as a special guest, as was Anothai Niruttimetee, a well-known name in Thai street art. Moreover, behind the bar was Jane Kaew-Yod. He’s a mixologist who believes that cocktails should tell a story, much like Ruang Khao Siam Sapphire itself.

As the night flowed on, so did the rum and the conversation. And if this guest shift event was anything to go by, it’s only a matter of time before Ruang Khao Siam Sapphire finds its way onto more bars, both in Thailand and beyond.
