From July 2 to 13, acclaimed Chef Fabio Genghini will take over Le Meridien Phuket’s beloved Italian restaurant, Portofino as a guest chef. It’s a chance for you to experience his expertise and distinctive Italian flavours – namely, blending tradition with innovation, highlighting classic ingredients and herbs, and creating dishes that are both nutritious and delicious.

Who is Chef Fabio Genghini?

With an illustrious career spanning over two decades, Fabio Genghini brings a wealth of experience to this exclusive two-week residency at Le Meridien Phuket. His love for cooking started when he was growing up in Rome, on the Tuscany border. His grandmother played a significant role in sparking his passion for food by introducing him to the joy of home-cooked meals. This initial exposure set him on a path towards becoming a skilled chef with a deep appreciation for high-quality, flavorful cuisine.

Chef Fabio Genghini’s culinary journey began in Tuscany, Italy. From there, his career then blossomed as he worked in various restaurants across the world, including in London, Malta, the Middle East, and now in Thailand. His nearly decade-long experience within Marriott branded hotels, such as Westin Doha, Sheraton Dubai, and Le Meridien Suvarnabhumi Bangkok, has honed his skills and expanded his global perspective. Today, he leads a team of talented chefs and culinary professionals as an Executive Chef at the Pre-opening Khao Lak Marriott Beach Resort & Spa.

The meal begins with Insalata Di Maiale Porchettato, a salad with crate-free pork neck, celeriac, cabbage, white onions, walnut dressing, and fruit mustard. Next up is Ravioli Di Magro. It’s an egg yolk ravioli with ricotta and spinach in noisette butter, crispy sage leaves, and aged Parmesan cheese.

Finally, for the main course, enjoy Traglia Di Pescato, In Padella Con Pomodoro Fresco, which consists of seared wild mullet with roast tomatoes, olives, cliffs herbs, and spicy nduja plate. Aside from the set menu, Chef Fabio’s signature dish is available to order separately starting from 320 THB.
