Established in Japan in 1985, IPPUDO Ramen has transformed the global ramen industry since opening its very first shop. From modest beginnings, it has evolved into an international sensation with over 290 branches in 16 countries.
Founded by renowned chef and ramen champion, Shigemi Kawahara, IPPUDO was created with a bold vision to reinvent the image of Japan’s beloved soul food and elevate it to a global culinary experience.

IPPUDO brings authentic Japanese ramen to the world with much effort being invested in high-quality ingredients. The original tonkotsu broth, which must have a rich, creamy texture and depth of flavour, is a labour-intensive process that typically takes 12 to 18 hours to make.
The broth is made by simmering pork bones, often including marrow, fat, and collagen-rich parts, at high heat for extended periods. This lengthy cooking process breaks down the collagen in the bones, contributing to the signature creamy texture and umami flavour of tonkotsu ramen.
