Ubon's sausage factories

Isaan is famous for it's fermented pork sausages, sold almost everywhere and with a number of major smallgoods factories dotted around the region.  Ubon Ratchathani has one of the biggest suppliers and will even supply by mail-order. 

Quality pork meat is mixed with cooked rice and allowed to 'cure' briefly which causes fermentation of the rice and this imparts a unique flavour.  Upon receiving fresh or frozen product one may leave sausage out for a few extra days to expand the flavour before cooking over a bbq or pan frying.

If the local dogs don't nick and run off with them first ..
