My food seller likes to lick the food she sells. Does your favorite vendor lick your food? How would you know?

You are correct in the first part but I don’t use google for a referrance. That said you should realize transmission of hepA is fecal oral and unlikely in this case. Since the SomTam vendor was using the tried and true method to prepare, one would expect many reported cases of hepA related to this practice. The risk is similar to mouth to mouth kissing. Risk of hepA would be higher in falang practice of shaking hands. 

My speciality is microbiology and Tropical Diseases if you must know.

The whole point of cooking food is to get rid of the bugs.

Beyond that it is about texture and flavour until you reach the point of peak chef.
