Following on from this thread about Bacon, my lovely wife made some. 

Absolutely delicious!

Tell her to make some more and sell it to friends/contacts - invite them over for a try first.  Then make it on order only.

Well folks heres a report about Faradays home made bacon....... DELICIOUS..........

Faraday was kind enough to send me some.

This morning i made some bread rolls, just tried the bacon, on a freshly made roll, with a drop of HP, absolutely amazing.

So a very BIG thank you to Faraday and his lovely wife.

Sorry no photo, wife not home, maybe i will post a photo tomorrow.

Yesterday I put on a kilo lump of pork loin to cure (dunno what was wrong with it). Bht 160.

20gm Himalayan pink salt, 8 gm brown sugar, 2.4 gm Prague No 1, 0.4 gm ascorbic acid and a dollop of liquid smoke juice. Will leave it in a zip-locked bag in the fridge for a week or so, massaging daily. 

Last time it turned out beautiful, and as Colin says, on home-made  ciabotta rolls, mmmmmmmmmmmmmm !

Hopefully that'll be in just over a week.

Bought 10 kilos of pork yesterday, & it's being cured for 7 days, then will put it in the smoker with some Hickory wood.

The proof of the pudding is always in the eating they say. So in your opinion Colin is Faraday's wife's bacon good enough to make a Muslim hungry for it ? 555

Just reading and thinking about I can taste it !  But where do you source "liquid  smoke juice" ?

I have had a go at ham but lacked the smokey taste bonus.
